Chocolate & Raisin Florentines: The Golden, Lacy Masterpiece

Chocolate & Raisin Florentines: The Golden, Lacy Masterpiece

Looking for a treat that’s as elegant as it is addictive? Meet the Chocolate & Raisin Florentines. These delicate, lace-like cookies are the ultimate blend of sophisticated texture and classic comfort. Imagine the snap of caramelized honey and almonds meeting the chewy sweetness of Thompson raisins, all finished with a smooth, velvety chocolate base. They are light, crisp, and undeniably beautiful—the kind of cookie that turns a simple coffee break into a gourmet experience.

Don’t let their delicate appearance fool you; these are surprisingly simple to whip up in your own kitchen! The magic happens in the oven, where the honey and cream bubble together to create a golden, buttery crunch that perfectly cradles the sliced almonds. Dipping them in semi-sweet chocolate is the final “chef’s kiss” that balances the sweetness with a rich, dark finish. Whether you’re gifting a box to a friend or treating yourself after a long day, these Florentines are pure gold.

Why You’ll Fall in Love with These Cookies:
  • Exquisite Texture: A symphony of “snap” from the caramel, “crunch” from the thin-sliced almonds, and “chew” from the raisins.

  • Gourmet Look, Simple Method: They look like they belong in a high-end bakery window, but the process is straightforward and rewarding.

  • The Perfect Balance: The bitterness of semi-sweet chocolate perfectly offsets the honey-gold caramelization.

We love recipes that bring a little bit of artistry into the everyday. Baking these is like creating tiny edible jewels that taste even better than they look. So, put the kettle on, get your chocolate melting, and let’s create some golden, chocolatey magic together!

recipe

Chocolate and Raisin Florentines

Ingredients

  • ⅔ cup Blanched Extra-Thin Sliced Almonds
  • ⅓ cup Thompson Raisins
  • ⅔ cup Organic Cane Sugar
  • ¼ cup honey
  • ¼ cup heavy cream
  • ½ cup Semi-sweet Chocolate Wafers

Method:
  1. Preheat the oven to 340 °F. Line a cookie sheet with parchment paper.
  2. In a small saucepan, heat honey, cream, and sugar. Simmer for about 5 minutes, but do not let turn brown. Remove from the heat and add the raisins and the almonds. Stir until coated.
  3. Place 1 teaspoon of the mixture onto the lined cookie sheet. Bake for 5 to 10 minutes, until golden. Cool completely.
  4. Melt the chocolate in the microwave. Mix every 20 seconds, until smooth. Dip the bottom of each florentine in the melted chocolate. Let rest upside-down to allow the chocolate to set.
